Mustard leaves are known as sarso ka saag. Mustard is referred to as Sarso, and green is referred to as Saag. The taste of mustard green is sour. Other green leaves, such as spinach, fenugreek (bathua), and radish, are added to balance out the bitterness of the mustard leaves. Don't forget to add jaggery (gud) to the mix. Jaggery, Sarso ka Saag, and Makki ki Roti combine to make a traditional Punjabi dish.
